Brief description of Traditional Cannoli

Cannoli are one of the best known specialties of the Sicilian pastry.
As such it has been officially recognized and included in the list of traditional Italian food products (PAT).
It consists of a waffle of fried dough and a filling of ricotta cheese.

For the rind, forming small discs of dough (made of wheat flour, sugar and butter).
To prepare the ricotta cheese we use a mixing process with ricotta cheese and sugar strictly following a procedure that has been
passed down from father to son.

The cannoli are filled at the time of eating them.
